The Process
- Hand-lined fish are iced at sea for the journey back to port
- Fish are inspected at one of seven Tobago Wild receiving stations located throughout the island
- Fish are transported in the ice slurries to Tobago Wild’s HACCP-certified processing plant in Canaan, Tobago
- Fish are filleted or packaged whole using advanced packing materials and gel ice to ensure freshness
- Shipments are prepared with time/temperature indicators and delivered to you overnight
- From the water to you, all fish is handled, processed, and shipped under a strict HACCP plan
